Sitting at a soaring 1,950 metres above sea level, the village of Tau-Rema is located close to the peak of Mount Ramelau, Timor-Leste’s highest and most sacred mountain. The cooler temperatures at such a high altitude allow for slower maturation of the cherries, giving a consistently high sugar content.

 

Timorese coffee is truly wild and organically grown underneath the imposing shade trees that dominate the landscape. With time old traditions in processing coffee passed on from generation to generation, coffee is helping to build up more opportunities for Timorese people to create a consistent and sustainable income from which to support and provide for their families and the local community.

 

The poor road conditions and inaccessibility to Tau-Rema has meant that coffee buyers in Timor-Leste have had little interest in travelling to this remote village, which until recently has left the farmers with no choice but to walk several kilometres to sell their excellent quality cherries on the side of the road to commercial companies.... but now, working collaboratively with Karst Organics, the nine smallholder farmers that make up the Tau-Rema cooperative are able to process their own delicious coffee for the speciality market.
